KSU professor creates healthy hamburger

A fast food favorite could soon be a healthy menu option. Getting a daily intake of omega-3 fatty acids could be as simple as biting into a burger.

Jim Drouillard, Kansas State University professor, created USDA approved omega-3 enriched ground beef. The experiment started about 10 years ago. He discovered feeding cattle flax seed increased omega-3 levels in the animals over the course of several months.

“It’s better for your cholesterol and your heart and everything,” he said.

A typical quarter-pound hamburger could pack as many as 350 milligrams of the fatty acid per serving. That’s about one-fourth of the healthy daily amount.

Phil Stultz, Kreem Kup owner, said the creation could boost business for his Manhattan restaurant.

“If there’s no significant taste in the beef,” he said, “I think it would be a positive thing.”

He said he hoped his health-conscious customers would appreciate the better burger.

Drouillard and his team are manufacturing and selling the beef through Manhattan-based NB03 Technologies. The product may be launched nation-wide later this year.
