The butcher's daughter
The art of butchery might be experiencing a renaissance, but I've been privileged to have a butcher in my family all my life. My father often recalls his days as an apprentice burdened with nasty jobs sweeping messy floors and plucking feathers. Growing up in Chicago's German neighborhood, his family often butchered, blended and smoked their own charcuterie. He and his brothers still make sausage together as they have for decades.
