Any of these recipes can be shaped into burgers. Grill over medium-hot coals, turning once, until cooked through.

Hog casings, cleaned, rinsed

1. Put chicken into a large bowl. Add the remaining ingredients except casings. Use clean hands to gently mix until seasonings are incorporated. Chill 30 minutes.

2. Follow manufacturer's directions on sausage stuffer to stuff mixture into casings, twisting off sausages at 6-inch lengths. Refrigerate, covered, up to 1 day.

3. Grill directly over medium-hot coals, turning once or twice, until cooked through, 20-25 minutes.

Spicy smoky Hungarian-style sausage

Ingredients:
3 pounds coarsely ground pork shoulder
1 pound ground beef chuck
4 to 6 large cloves garlic, crushed
1 ½ tablespoons each: smoked paprika, sweet paprika (preferably Hungarian)
2 to 3 teaspoons crushed red pepper flakes
2 ½ teaspoons salt
1 teaspoon each, ground: allspice, black pepper
½ cup pilsner beer, such as German Bitburger
