Bub City (435 N. Clark St., 312-610-4200), the latest concept from Melman siblings RJ, Jerrod and Molly, opens Thursday.
The much-buzzed-about restaurant features barbecue, southern specialties and a shrimp bar; a whiskey-focused cocktail program by famed mixologist (and partner) Paul McGee; and live country music (on a 16-foot stage) managed by Ed Warm and Tom DeSanto, who co-own country bar Joe's on Weed and are partners in Bub City as well.
The restaurant takes its name from the Bub City restaurant that Rich Melman opened on Weed Street back in 1989; the original Bub City was a rustic-Southern crab shack, a Bob-Chinn's-meets-Pensacola sort of deal, only with a strong emphasis on 'que and Cajun dishes.
I loved that place, right down to the mannequin-at-the-fake-urinal sight gag in the ladies room. I wonder if we'll see similar jokes in this place.
